beetroot chutney
My landlady gave me a full basket of beetroots.I'll make some chutney this afternoon, here's the recipe.
3 pounds steamed beetroots
1,5 pounds green apples
2 large onions
1 teaspoon salt
0,5 pound of brown sugar
0,5 teaspoon of ground ginger
1 pint of red wine vinegar
the zets of 2 oranges
In a saucepan put the vinegar, the apples, the zests , the chopped onions, the brown sugar...Allow to boil gently for 30 minutes. Add the beetroots in small pieces, the ginger and let boil for 15 minutes. Put in jars and cover immediately.
You may keep it for at least 6 months...It's nice with cold meat, salad, cheese...
